SCOTTISH SHORTBREAD CRISPS

Shortbread is near and dear to my heart.  As a little girl, I remember visiting the Scottish bakery, Ackroyd's in Redford, MI, with my great grandmother, grandmother (both born in Scotland) , and my mother.  I now take my son there a few times a year when I'm in that neck of the woods.  The hour-each-way drive is well worth the trip.  Akroyd's was the only thing my grandmother ate as she neared the very end of life a couple of years ago.  We paid an ungodly sum to ship fresh meat pies and shortbread (among other yummies!) from Michigan to Florida to afford her just one more day of joy.

One great appeal of shortbread is its utter simplicity.  The combination of five basic ingredients: flour, salt, sugar, vanilla, and butter, makes utter magic.  Of course, you can add any number of enhancements -- praline pecans, cinnamon, chocolate, ginger -- but I like them best in their classic state.

Finally, the only way to improve upon a Scottish recipe is with the assistance of a genuine Scottish dog.  Mr. Wilson, our West Highland White Terrier, faithfully sat beneath my shooting table -- always "at the ready" -- to keep the floors their shiniest clean.  A good dog always deserves a treat!
