BEST SEMI-SWEET FUDGE SAUCE

Nothings says "I love you" more than decadent chocolate fudge.  Over cake, ice cream, of just by the spoon, I love making and sharing this rich, velvety sauce as a gift or in recipes.  This is a sauce that works well col and hot alike.  It is a bit thinner than some fudge sauces.  I wanted it to be viscous but not too firm when cold (it's important to be able to stick a spoon in!) but still thick and rich enough when warmed (some, when heated, are runny and thin).  The recipe takes a bit of time and patience, so it's best to make a lot at once (you'll surely want more again soon).  The key is to use very fresh dairy so you can refrigerate for up to three weeks or freeze for months.
